ZUCCHINI RELISH 
10 c. ground zucchini, unpeeled
4 lg. onion
1 lg. carrot
3 lg. green peppers
1/4 c. salt
4 c. sugar
1 tsp. turmeric
1 tsp. celery seed
2 1/2 c. white vinegar
1 tbsp. cornstarch

Grind zucchini, onion, carrot and green peppers. Add salt and let stand overnight. Drain and wash in cold water. In saucepan, mix sugar, turmeric, celery seed, vinegar and cornstarch. Add to zucchini mixture and simmer for 30 minutes. Makes 6 pints. Delicious with hot dogs, hamburgers or sandwiches.
