PEGGY'S "TOO MANY" ZUCCHINI
RELISH
 
10 c. finely chopped zucchini
4 c. onions, chopped
3 c. carrots, chopped
2 c. green peppers, chopped
1/4 c. salt
2 c. cider vinegar
4 c. sugar
2 tbsp. cornstarch (mixed to paste in a little water)
2 tsp. celery seed
1 tsp. black pepper
1 tsp. turmeric
1 tsp. nutmeg

Combine all vegetables with salt; stir. Let stand 3 hours. Drain. Bring vinegar, sugar, cornstarch and spices to boil in large kettle. Add vegetables and stir constantly. Cook 10 minutes and ladle into sterilized jars. Seal. Process in hot water bath 10 minutes.
