HONEY MUFFINS 
1 egg
3/4 c. milk
1/2 c. vegetable oil
2 c. flour
1/3 c. honey
3 tsp. baking powder
1 tsp. salt
1/4 c. butter, melted
1/2 c. sugar
1 tsp. ground cinnamon

Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups. Beat eggs in large bowl; stir in milk and oil. Stir in flour, honey, baking powder and salt, just until moist (batter will be lumpy). Spoon into muffin cups, filling about 3/4 full. Bake until muffins are golden brown, about 20 minutes. Remove from pan immediately. Mix sugar and cinnamon. Dip tops of muffins in melted butter and then roll in sugar and cinnamon mixture.
