PECAN-ORANGE MUFFIN 
1 med. orange
3/4 c. pecans, chopped
1/2 c. butter, soft
1 c. + 1 tbsp. sugar
2 lg. eggs
1 tsp. baking soda
2 c. flour
1 c. plain yogurt or buttermilk
1/3 c. orange juice

Preheat oven to 375 degree. Grease or paper line muffin pan. Finely chop pecans. Wash well and dry the orange. Finely grate peel of the orange, no white pith.

Beat butter and 1 cup sugar until pale and creamy. Beat eggs in, one at a time. Stir in baking soda and peel. Fold in 1/2 flour, then 1/2 of yogurt. Repeat, then fold in pecans. Scoop batter into muffin cups. Bake 20 to 25 minutes. Remove from oven. Brush orange juice over hot muffins and sprinkle with sugar. Let stand 5 minutes then remove from pan.
