1 lb. ground beef
1 1/2 c chopped onion
1/2 tsp salt
1/4 tsp pepper
3 eggs
1 1/2 c milk
3/4 c biscuit mix
2 tomatoes, sliced
1 c shredded cheddar

Cook and stir ground beef and onion until brown, drain and add salt and pepper. Spread in greased 10-inch pie plate. Beat eggs, milk, and baking mix until smooth. Pour over beef.

Bake 25 minutes at 400°F. Top with tomatoes, sprinkle with cheese, and bake 5 to 8 minutes until knife comes out clean.
