POLLO AL LIMON 
1 (3 - 3 1/2 lb.) roasting chicken
1 whole lime (pierce few little holes around lime)
1 whole med. size onion
3 cloves of garlic
2 tbsp. seasoning (Creole seasoning La Cena)
2 tbsp. melted butter

Rinse chicken, pat dry. Sprinkle cavity of chicken with seasoning. Place onion, lime and garlic inside chicken cavity. Brush chicken with melted butter and sprinkle with seasoning. Bake at 350 degrees for approximately 1 1/2 hours or until tender.
