PORCUPINE MEATBALLS | |
1 1/2 lb. ground beef 1/2 c. rice 1 tsp. salt 1/2 tsp. pepper 1 tbsp. minced onion 1 sm. can tomato soup 1/2 c. water Wash rice thoroughly. Combine beef, rice, salt, pepper and onions. Shape into small balls. Heat tomato soup and water in pressure cooker. Drop meatballs in soup mixture. Close cover securely. Place pressure regulator on vent pipe and cook 2 minutes with pressure regulator rocking slowly. Let pressure drop on its own accord. Also have used Franco-American gravy - beef or mushroom. |
