SPINACH QUICHE 
1 (9 oz.) pkg. frozen chopped spinach, cooked & drained
1/2 c. green onions, chopped
1 to 2 cloves garlic, minced
2 tbsp. butter
1 1/2 c. grated Swiss cheese
3 eggs
3/4 c. milk
1 tsp. salt
1 tsp. basil
1/2 tsp. celery salt

TOPPING:

Tomato slices
Bread crumbs
Parmesan cheese

Saute onions and garlic in butter, add cooked and drained spinach. Mix together well and set aside. Mix remaining ingredients together, then add spinach mixture. Pour into pastry crust or a greased glass pie dish. (It's great without the pie crust!) Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees for 10 minutes. Now add toppings. (Lightly sprinkle cheese then bread crumbs then top with tomatoes.) Bake 10 minutes more. Let cool 10 minutes before serving.
