STUFFED SHELLS 
1 eggplant, about 1 1/2 lb.
1 lb. Mozzarella cheese, grated
1 1/2 lb. hamburger
Shells
Spaghetti sauce

Peel and slice eggplant. Cook in 1/3 cup water until tender. Drain off liquid, if any, and mash like potatoes. Brown hamburger, drain off fat. Mix together eggplant, hamburger and grated cheese; let set until cheese is melted. Cook shells and fill with hamburger mixture. Place in oblong pan. Pour your favorite spaghetti sauce over stuffed shells and bake for 25 to 30 minutes in 350 degree oven.
