STUFFED JUMBO SHELLS | |
1/2 (12 oz.) pkg. jumbo shell macaroni (about 20) 1 tbsp. salad oil 1 1/2 lb. ground beef 1 med. onion, minced 1 garlic clove, minced 1 c. minced celery 1 c. California walnuts, chopped 2 (15 1/2 oz.) jars spaghetti sauce 2 tbsp. Parmesan cheese 2 tsp. salt 1 tsp. pepper Prepare shells as label directs (or a little less - about 10 minutes - so the shells do not crack); drain well. In a 12 inch skillet over medium high heat, in hot salad oil, cook ground beef, onion, garlic, celery, salt and pepper until meat is well browned; remove skillet from heat and stir in walnuts and 1/2 jar of spaghetti sauce. Stuff a rounded tablespoon of meat mixture into each shell. Reserve remaining meat mixture. Spoon 1 cup spaghetti sauce into 10 x 2 inch circle casserole or 12 x 8 inch baking dish; sprinkle with remaining meat mixture. Arrange stuffed shells over sauce in one layer. Spoon remaining sauce evenly in and around shells. Sprinkle with cheese. Bake in 350 degree oven for 20 minutes or until heated through. Makes 6 servings. |
