SWEET POTATO PUDDING 
3 c. cooked mashed sweet potatoes
1 c. sugar
2 eggs
1 tsp. vanilla
1/3 c. milk
1/2 c. butter
1 c. firmly packed brown sugar
1/3 c. all-purpose flour
1 c. chopped pecans
1/3 c. butter

Combine sweet potatoes, sugar, eggs, vanilla, milk and 1/2 cup butter. Beat with electric mixer until smooth. Spoon into greased 2-quart casserole.

Combine brown sugar, flour, 1/3 cup butter and pecans. Sprinkle on top of casserole. Bake at 350 degrees for 30 minutes. Yield: 8-10 servings.
