5 med. sweet potatoes
1 3/4 c. sugar
1 c. raisins
7 oz. shredded coconut
Pinch of nutmeg
1 tsp. lemon extract
1 stick butter
Pinch of cinnamon
1 (18 oz.) bottle orange marmalade

Cook potato, then mash while hot. Add all ingredients except marmalade. Place in baking dish. Cover with marmalade. Bake 1/2 hour at 350 degrees.
