SWEET POTATO PIE 
6 c. sweet potatoes (mashed, 8 med. potatoes)
3 eggs
1 tsp. ground allspice
3/4 tsp. salt
1/8 c. bacon drippings
2 c. cane syrup

Put on in cold water; boil potatoes until you can stick a fork in them. Drain, peel, while still hot. Mash with potato masher. If stringy, you will have to stir with mixer until all strings have been removed. When potatoes are smooth, add salt, allspice and eggs; stir well. Add bacon dripping and syrup. Stir until thoroughly mixed. Use ready made pie crusts or make your own. Pour potato mixture into shallow pie shells. Bake at 425 degrees for 15 minutes. Then reduce heat to 350 degrees. Bake an additional 40 to 50 minutes or until done. Makes 3 (9 inch) pies.
