FLUFFY PANCAKES 
1 teaspoon oil
1 egg
1 cup milk
1-1/2 cups flour; any kind*
4 teaspoons baking powder

Whip the egg and oil together until foamy, then add remaining ingredients.

Batter will be thick. Stir just until mixed, some lumps are ok.

Note: I use a mixture of unbleached, whole wheat, and about 1/4 cup oat bran.

Makes about a dozen medium size pancakes.
