HARVARD BEETS 
5 medium fresh beets (1 1/4 lb.)
1 tbsp. cornstarch
1 tbsp. sugar
3/4 tsp. salt
dash of pepper
2/3 c. beet juice
1/4 c. vinegar

Cook fresh beets and cut into slices (can use 1 one-pound can beets).

In small

saucepan,

stir

together cornstarch, sugar, salt and pepper. gradually stir in beet juice (may have to add water to make 2/3 cup) and vinegar. Cook, stirring constantly until mixture thickens and boils. Boil and stir 1 minute. Stir in beets and heat through.
