HARVARD BEETS (Microwave) 
1/4 c. sugar
1 tbsp. cornstarch
1/2 tsp. salt
Dash white pepper
1/4 c. vinegar
1/4 c. orange juice
1 can (16 oz.) sliced beets, drained

Drain beets. If necessary, add water to make 3/4 cup. Set beets aside.

Combine sugar, cornstarch, salt and pepper. Stir in beet liquid, vinegar and orange juice into sugar mixture. Cover microwave 5-7 minutes on high or until mixture is glossy and slightly thickened, stirring twice. Add beets. 4 servings, 1 quart casserole.

Since microwave ovens vary in power, you may need to adjust your cooking time.
