COD CANCUN 
2 tbsp. lime juice
3 tsp. vegetable oil
1/4 tsp. salt
1/4 tsp. pepper
4 (6 oz.) cod or other firm white fish fillets
1 tsp. garlic, minced
1 tsp. seeded & pickled jalapeno pepper, minced
1/2 tsp. ground cumin
1/2 c. onion, chopped
1/2 c. yellow, red or green pepper, chopped
1/4 c. fresh cilantro or parsley, chopped

Mix lime juice, 1 teaspoon oil, salt and pepper in a 9 inch microwave-safe plate or 11 x 7 inch baking dish. Add fish; turn to coat both sides, then arrange in dish so thickest parts are toward outside edge. Cover and let stand 15 minutes to marinate.

Meanwhile, mix the remaining 2 teaspoons oil, garlic, jalapeno pepper and cumin in medium size microwave-safe bowl. Cover loosely with wax paper. Microwave on high 1 minute. Stir in onion and bell pepper. Cover and microwave 2 minutes, until is crisp-tender, stirring once. Spoon over fish. Cover with vented plastic wrap. Microwave on high 4 to 6 minutes, rotating dish 1/4 turn once, until fish is barely opaque in thickest part when tested with a fork. Let stand 1 minute. Sprinkle with cilantro.

Makes 4 servings.

I made mine in regular oven. Use foil instead of wax paper.

Since microwave ovens vary in power, you may need to adjust your cooking time.
