FRENCH PANCAKES 
3 eggs
1 tsp. sugar
1/2 tsp. salt
1 c. milk
1/2 c. flour
1 tbsp. cooking oil

Separate the yolks and white of the eggs. To the beaten egg yolks, add sugar, salt and half of the milk. Stir in sifted flour and the other 1/2 cup of milk; then the oil. Fold in stiffly beaten egg whites. Make sure griddle is so hot that a drop of water bounces on it before putting spoonfuls of batter on it. Work fast so ingredients do not separate. Light and wonderfully fluffy.
