SWEET POTATO CASSEROLE 
3 c. sweet potatoes, mashed (1 lg. can, drained)
1 stick butter, melted
1/3 c. sugar (white or brown)
2 eggs, beaten
1/3 c. milk
1 tsp. vanilla

Mix together and put in a shallow baking dish.

STREUSEL TOPPING:

1 c. brown sugar
1/2 c. flour
1/3 stick butter
1 c. chopped nuts, optional
Best if cut in half

Mix and put on top of casserole. Bake at 350 degrees for 45 minutes. Note: Can be made ahead of time and frozen. Add topping when your ready to bake it.
