SPINACH FLORENTINE 
Everyone will eat spinach cooked in this unusual way.

1 (8 oz.) pkg. wide noodles
1 onion, finely chopped
1/2 c. butter
2 (10 oz.) pkg. chopped spinach, thawed & drained
1 tsp. salt
3 eggs, slightly beaten
1 c. sour cream (or sour cream substitute)

Cook noodles in salted water until barely tender, then drain. Saute onion in butter. Combine all ingredients and place in a well-greased 6 cup ring mold. Place mold in pan of hot water and bake in a 350 degree oven 45 minutes. Unmold and serve hot. Makes 6 to 8 servings.

My husband dislikes spinach but enjoys it prepared this way.
