ELEGANT CRAB SOUP 
1/4 c. finely chopped onion
1/4 c. and 2 tbsp. butter, melted
2 tbsp. all-purpose flour
2 (12 oz.) pkg. frozen crab meat
Chopped parsley
1/4 c. sherry
1 tsp. salt
Pepper to taste
1 qt. and 2 c. milk
1 c. whipping cream

Saute onion in butter until tender. Add flour and cook 1 minute, stirring constantly. Add crab meat, salt and pepper; cook over low heat, stirring occasionally, about 10 minutes. Gradually add milk; cook over low heat 15 minutes. Add cream and sherry. Sprinkle with parsley just before serving.

Makes 8 cups.
