PARADISE PINEAPPLE SALAD 
3 oz. box lemon or lime gelatin
1 c. boiling water
1 c. sour cream
1 c. cottage cheese
1 c. crushed pineapple, drained

Dissolve gelatin in boiling water. Chill until slightly thickened. Beat in sour cream until smooth. Fold in cottage cheese and pineapple. Pour into 1 quart mold or 8 small molds. Chill until firm. Unmold and garnish with orange slices or more crushed pineapple and fresh mint. Makes 8 servings.
