EASY CHICKEN AND RICE CASSEROLE 
4-6 skinless chicken breasts, bone in or boneless
1 c. uncooked rice
1 can mushroom soup
1 1/2 cans of water
Salt and pepper to taste

Spray 9 x 13 inch baking dish with nonstick cooking spray - put rice in dish. Spoon 3/4 of soup over rice and spread - lay chicken on top of rice - salt and pepper to taste. Spread remaining soup over chicken. Pour water over everything - cover with foil and bake for at least 1 hour at 350 degrees.

Check occasionally to see if it needs more water - remove foil and let chicken brown on top. Variations - use 5 ounce package yellow rice or 1 package brown and wild rice.

I did use a 10 oz. bag of yellow rice (with spices) and added 2 cups of water. I also just put everything, except the chicken in a bowl first and mixed it up, then put it in the pan. Also, instead of mushroom soup I used a tomato basil bisque soup. It's still in the oven, so we'll see how it turns out... I hope it's good.
