FRESH APPLE CAKE 
2 eggs
1 c. white sugar
1 c. brown sugar
1 1/4 c. cooking oil
3 c. plain flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
3 c. apples, chopped
1 c. chopped nuts
2 tsp. vanilla

Beat eggs; add sugar and oil. Beat for 3 minutes. Sift remaining dry ingredients together and slowly add to creamed mixture. The batter becomes real stiff at this point and you will either have to mix by hand or use the bread dough hooks for your mixer. Remove from mixer and add apples and vanilla. Bake in a greased and floured tube pan. You will need to spoon the mixture into the tube pan. Bake at 350 degrees for 1 hour and 15 minutes or until done. Leave in pan until almost cool.
