BAKED POTATO SQUARES 
3 cups leftover or prepared instant mashed potatoes
2 tbsp. all-purpose flour
1 1/2 tsp. salt (unless potatoes already salted)
1/4 tsp. fresh ground pepper
8 oz. dairy sour cream
2 tbsp. chopped chives
1/2 cup shredded Swiss cheese
4 slices crisp bacon, crumbled
1 egg, slightly beaten

Mix potatoes, flour, salt and pepper. Spoon into greased 9x9-inch baking dish, spreading to edges. Mix sour cream, chives and egg. Spread over potato mixture. Sprinkle with cheese and bacon. Bake in 350°F oven for 25 to 30 minutes or until set. Cut in squares.

4-6 servings.
