HANNAH'S POTATO POCKETBOOKS
This is my first recipe here, but you must try these. My Grandmother was a German, and this is my favorite food. I'm a guy so please overlook my mistakes. Hannah was my grandmother, and this recipe has been passed down for generations.

3 cups mashed potatoes
noodle dough (see below)
1 cup chopped fried onions
1 cup half and half
1 cup fried bread crumbs (about 1/2-inch square)

Mix fried onions with potatoes. Roll dough, cut in 4 to 5-inch squares. Spoon potatoes into each square. Bring all four corners up to middle and pinch until sealed. Drop each one onto boiling water for 10 to 12 minutes. Drain water and add half and half and cook to a simmer for 10 to 12 minutes. Fry bread crumbs and pour over pocketbooks. Serve.

Noodle Dough:

3 eggs
3 tbsp. cream
1 tsp. salt
flour

For noodle dough use 3 eggs, one tablespoon of cream for each egg, and one teaspoon of salt. Add flour until you have stiff dough.
