SUMMERTIME OKRA GUMBO 
1 1/2 c. sliced fresh SMALL okra
1 1/2 c. chopped fresh tomato
1 onion, chopped
1 tbsp. vegetable oil (may substitute bacon drippings)
1 tsp. red chili powder
1 tsp. hot Hungarian paprika
Salt & black pepper to taste

Saute okra, tomato and onions in oil until onions become transparent. Sprinkle chili powder, paprika, salt and pepper onto the mixture. Reduce heat to simmer in covered pan. Add 1/4 cup water if gumbo gets too dry. Simmer 10 minutes or until okra is tender. Serves 4.
