PLUM NUT CONSERVE 
2 lb. fully ripe plums, finely chopped 2 3/4 c.
1 med. orange
1/3 c. walnuts, finely chopped
1/2 tsp. salt
5 1/2 c. sugar
1 (1 3/4 oz.) pkg. powdered pectin
3/4 c. water

Remove pits, do not peel. Finely chop plums to measure 2 3/4 cup. Place in large bowl. Grate 1 teaspoon orange peel and 1/4 cup orange juice. Add to plums with walnuts and salt.

With rubber spatula, stir in sugar until thoroughly mixed. Let stand 10 minutes. In 1 quart pan over medium heat, heat pectin and water to boil. Boil 1 minute, stirring constantly. Stir pectin mixture into fruit. Stir 3 minutes. Spoon into container. Let stand at room temperature for 24 hours or until set.

Freeze 1 year or refrigerate 3 weeks. Makes eight 8 ounce containers.
