PLUM TORTE 
1/4 c. unsalted butter
3/4 c. plus 2 tsp. sugar
1 1/2 ripe bananas, in large chunks
1 c. sifted flour
1 tsp. baking powder
1/2 c. egg substitute
24 halves ripe pitted prune plums
Juice from 1/2 lemon
1 tsp. cinnamon

Preheat oven to 350 degrees.

Beat the butter, 3/4 cup of the sugar and the bananas with an electric mixer until well blended. Beat in flour, baking powder and egg substitute. Spoon the batter into an ungreased springform pan (any size).

Arrange plum halves, skin side down, and sprinkle with 2 teaspoon of sugar (or more if plums are very tart) and a few squeezes of lemon juice and about a teaspoon of cinnamon.

Bake 1 hour, approximately. Remove and cool. Refrigerate and freeze if desired. Makes 8 servings.
