PLUM CAKE 
3 lbs. Italian prune plums

Same ingredients as for Challah.

After dough has risen to double its size, I use about 3/4 of it and put it on a greased baking sheet.

Wash plums, remove pits and slit each half of plum and layer them in rows, half of the first layer covered by the next plums. Depending on ripeness and sweetness of the plums, put about 1/2 - 1 cup of sugar with a dash of cinnamon (if you like it). Let rise for about 45 minutes in a warm place, avoid draft.

Place in 375 degree F. oven for about 45-60 minutes. To avoid the fruit juice from seeping onto the bottom of the oven, I make sure to place the fruits 1 inch from the baking sheet.
