HOMEMADE MARSHMALLOWS | |
1 pkg. unflavored gelatin 1/3 c. cold water 1/2 c. sugar 2/3 c. white corn syrup 1/3 tsp. salt 1 tsp. vanilla Combine gelatin and water in top of double boiler. Stand 5 minutes to soften. Place over boiling water and heat until gelatin dissolves. Add sugar and heat over hot water until dissolved. In large mixing bowl, combine corn syrup, vanilla and salt. Add hot gelatin-sugar mixture. Beat at high speed until light and fluffy; approximately 15 minutes. Lightly grease a 9" square cake pan. Pour in mixture. Let stand in cool place until set, about 1 1/2 hours. Cut into 1" squares. Roll in powdered sugar. Makes about 3 dozen. |
