SOFT GINGER COOKIES 
1 c. sugar
1 c. lard
1 c. molasses
1 c. hot coffee
3 tsp. ginger
3 eggs
5 c. flour (more if needed)
3 tsp. baking soda
1/2 c. raisins
1/2 c. nuts

Cream shortening and sugar, add beaten eggs and molasses. Alternate sifted dry ingredients and coffee. Lastly add the floured nuts and raisins. Drop from spoon onto greased cookie sheet. Bake 15 to 20 minutes in moderate oven, 350 degrees.
