JUDY'S CRACKER JILLS | |
1 (3 oz.) pkg. cream cheese 2 cups all-purpose flour 1 1/4 cups brown sugar 1/2 cup (1 stick) butter 1/4 cup dark corn syrup (Karo) 1/2 tsp. baking soda 1 egg 1 cup salted peanuts (Spanish) 2 cups coarsely crushed soda crackers In large mixer bowl combine cream cheese, flour, sugar, butter, corn syrup, baking soda and egg. Mix well at low speed. Fold in peanuts and crackers; blend well. Cover and chill dough for about 2 hours. Shape dough into 1-inch balls. Roll in granulated sugar and place on ungreased cookie sheets. Bake at 375°F for 10 to 12 minutes. Makes about 60 cookies. Submitted by: Judy Fisher |
