SODA CRACKER PECAN PIE 
Great for parties!

3/4 cup chopped pecans
3/4 cup crushed soda crackers (I use Keebler Club)
1 tsp. baking powder
3 egg whites
1/8 tsp. salt
1 tsp. vanilla
1 cup sugar

Preheat oven to 350°F.

Combine pecans, crackers and baking powder. Set aside.

Beat egg whites until stiff, add salt and vanilla. Gradually add sugar to egg whites. Fold in dry ingredients.

Put into greased 9-inch pie pan. Bake at 350°F for 30 minutes. Cool.

Refrigerate for at least 3 hours before serving. Top with whipped cream, if desired.
