OAT BRAN MUFFINS 
2 1/4 c. oat bran
1/4 c. nut meats
1/4 c. raisins
1 tbsp. baking powder
1/4 c. brown sugar or honey
1 1/4 c. skim milk
2 egg whites
1 tsp. cinnamon (optional)
2 tbsp. vegetable oil

Basic recipe: place all ingredients into bowl. Mix until all moistened. Don't over mix. Bake at 425 degrees for 15 minutes. Makes 12 to 14. 125 calories each.

Variations: Pineapple muffins: 1/2 cup skim milk only, 1/4 cup brown sugar, 1 large can crushed pineapple with juice.

Apple Cinnamon: 1 1/3 tsp. cinnamon, 1/2 c. skim milk only, 3/4 cup apple juice, 1 medium apple, chopped.
