SQUASH SUMMER DISH 
1 c. sliced (small) yellow neck squash
1 c. zucchini (round slices 1/2 to 3/4 round)
1 sliced onion
2 sliced tomatoes
1/4 c. chopped green or red pepper(s)
Salt and pepper to taste
1 c. grated Cheddar cheese
1/2 c. bread crumbs (Italian seasoning if possible)

Parboil zucchini and squash. Saute onions in a little butter. Drain zucchini and squash WELL. Beat eggs. Add salt and pepper. Gently mix eggs. Dump into shallow buttered baking dish. Add grated cheese. Add rest of mixture to dish.

Dot with butter and sprinkle with bread crumbs and some Parmesan cheese. Bake at 350 degrees for 30 minutes covered.
