HUEVOS RANCHEROS 
2 tbsp. salad oil
1/2 c. chopped onion
1 green pepper, chopped
1 tomato, peeled and chopped
1/2 c. water
1 tsp. dried leaf oregano
1/4 tsp. salt
1/2 to 1 tsp. hot sauce
1 (8 oz.) can tomato sauce
6 eggs

Saute pepper and onions. Add other ingredients except eggs. Simmer covered 20 minutes. Uncover and add eggs and cook slow until eggs are done.
