ANN'S FISH CHOWDER | |
4 oz. salt pork 2 onions, minced 4 c. potato (raw, cut in 1/2 inch cubes) 4 c. boiling water 1 1/2 lb. (approximately) fish (ocean perch, cod, or haddock may be used; Can use fresh fish if bones are picked out) 1 (13 oz.) evaporated milk Salt and pepper to taste 1 tbsp. parsley flakes 1 tbsp. butter 1 tbsp. flour dissolved in milk Cut salt pork in small pieces, fry slowly in soup kettle or fry pan until golden brown color. Add onions, potatoes, hot water and fish. Simmer slowly until potatoes are done. Add evaporated milk, salt and pepper, parsley, butter and flour thickening. Stir and cook for 5 minutes. More potatoes, milk and thickening can be added. Milk can be whole or half and half. |
