5 c. water 1 can (14 1/2-16 oz.) tomatoes, whole or crushed 1 can (8 oz.) tomato paste 1 c. white wine 1 med. onion, chopped 1 carrot, chopped 1 stalk celery, chopped 1/4 c. coarsely chopped parsley 2 cloves garlic, minced 2 bay leaves 2 tsp. salt Pepper to taste Dash hot pepper sauce, optional 2 lb. fresh or frozen fish fillets or a combination of fillets & seafood, thawed Combine all ingredients, except fish, in a large pot. Bring to a boil, then lower heat and cook, uncovered, for 20-30 minutes, until vegetables are tender. Cut fish into large chunks. Add fish and bring mixture just to boiling, reduce heat. Cover and simmer for 6-8 minutes more. |
