LEMON CHEESE FILLING 
2 c. sugar
4 tbsp. plain flour
3 whole eggs, well beaten
3 lemons
1 c. hot water
Pinch of salt

Combine sugar and flour. Add eggs, juice of 3 lemons, hot water and pinch of salt. Cook together on low heat until it thickens. Add 1/2 stick butter and cool. Stir into the filling, the grated rind of 3 lemons and spread on layers.
