LEMON FILLING: 
1/4 c. butter
1 c. sugar
3 beaten eggs
Juice of 1 1/2 lemons
Grated rind of 1 lemon

Melt butter in double boiler. Mix in sugar. Stir in eggs, lemon juice and grated rind. Cook, stirring constantly, until thick (about 20 to 30 minutes). Chill several hours.
