PERFECT SAUTEED MUSHROOMS 
1/2 lb. fresh mushrooms (for maximum freshness, select only those whose caps are tightly closed around the stem)
1 tbsp. butter
Sea salt, seasoned salt or salt-free seasoning (optional)
1 scant tbsp. fresh lemon juice

Cut ends from stems of mushrooms. Slice mushrooms lengthwise into 1/8" to 1/4" slices. Melt butter in large skillet. Add mushrooms, tossing lightly in butter, until they just begin to soften. Add seasonings and lemon juice. Serves 3.
