PECAN CAKE | |
1/2 lb. butter 1 3/4 c. sugar 4 eggs, lightly beaten 3 c. flour 1 tsp. nutmeg 1 tbsp. cinnamon 1 tbsp. baking powder 1/2 c. whiskey or wine 1/2 lb. candied pineapple 3/4 lb. candied cherries 1 tsp. almond flavoring 1 lb. pecans Cream butter and sugar; add eggs. Add dry ingredients alternately with whiskey. Flour all fruit; add to mixture with pecans and flavoring. Pour mixture in greased tube pan lined with paper. Steam 1 hour and 30 minutes; bake 30 minutes at 350 degrees. Remove tube from pan and bake 30 minutes longer. |
