RED HOT TOMATOES 
3 to 4 fresh tomatoes
2 tbsp. vinegar
1/3 c. vegetable oil
Hot picante sauce to taste
1 or 2 tbsp. fresh parsley (optional)
Salt and pepper to taste

In bowl, cut tomatoes into bite sized pieces. Mix rest of ingredients and add to tomatoes. Mix well. Refrigerate for a couple of hours before serving. If desired, other fresh vegetables may be added, such as onions, cucumbers and peppers.
