SHRIMP THERMIDOR 
1/2 to 1 lb. shrimp
1/2 c. mushrooms, cooked
1/4 c. melted butter
2 tbsp. flour
1 tsp. salt
1/2 tsp. dry mustard
Dash of red pepper
2 c. milk
1/2 lb. sharp cheddar cheese, grated
Paprika
1 c. rice, uncooked

Cook rice according to directions. Mix in shrimp and mushrooms, set aside. Make cream sauce with butter, flour, salt and seasonings. Add milk and cook until thickened. Put rice mixture in greased casserole; cover with grated cheese and sprinkle with paprika. Bake at 400 degrees for 15 to 20 minutes. Serves 4.

Delicious and very simple. I added about a teaspoon of sherry, and sauteed some minced celery and onion in the butter before making the sauce.
