KIM'S "SUGAR-FREE" COCONUT CREAM
PIE
 
1 large box Cook 'N Serve sugar-free vanilla pudding mix
2 1/2 c. skim milk
1 tsp. vanilla
1/2 c. unsweetened grated coconut

Crust:

1 box "Estee" sugar-free coconut cookies or 40 vanilla wafers
1/4 c. coconut
3 tbsp. melted butter

Preheat oven to 350°F. Crush 30 cookies, combine with melted butter and 1/4 cup coconut. Press into pie plates.

Bake 6 to 8 minutes. Set aside to cool. Combine pudding mix and milk. Cook until thick and bubbly (microwave works good). Remove from heat. Stir in vanilla and 1/2 cup coconut. Pour into cooled crust. Chill several hours. Top with "lite" Cool Whip or meringue.

Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
