KIM'S "SUGAR-FREE" COCONUT CREAM PIE | |
1 large box Cook 'N Serve sugar-free vanilla pudding mix 2 1/2 c. skim milk 1 tsp. vanilla 1/2 c. unsweetened grated coconut Crust: 1 box "Estee" sugar-free coconut cookies or 40 vanilla wafers 1/4 c. coconut 3 tbsp. melted butter Preheat oven to 350°F. Crush 30 cookies, combine with melted butter and 1/4 cup coconut. Press into pie plates. Bake 6 to 8 minutes. Set aside to cool. Combine pudding mix and milk. Cook until thick and bubbly (microwave works good). Remove from heat. Stir in vanilla and 1/2 cup coconut. Pour into cooled crust. Chill several hours. Top with "lite" Cool Whip or meringue. Serves 8. |
