VEGETABLE CASSEROLE 
2 cans mixed vegetables
1 stick butter
1 c. chopped onion
1 c. chopped celery
2 c. grated natural Cheddar cheese
1 c. mayonnaise (may use slightly less if desired)
1 stack Ritz crackers

Simmer vegetables until juice is gone and pour into casserole dish. Mix onion, celery, mayonnaise and cheese and spread over vegetables. In a saucepan, melt butter and add crushed crackers. Put on top of casserole and bake in 350°F oven for 20 minutes.
