POTATOES AU GRATIN 
6 to 8 potatoes, sliced raw
1/2 cup (1 stick) butter
2 tbsp. all-purpose flour
1 regular block cheddar cheese (mild or sharp), shredded
1 cup milk (sweet)
salt and pepper

Peel and slice potatoes and place in bowl of cold water and let sit. In skillet on low fire, melt butter and add milk and flour, a little at a time, until smooth. Then add shredded cheese and season to taste (salt and pepper).
