NUT CAKE WITH MOCHA FROSTING 
8 eggs
1 1/2 c. sugar
2 c. hazelnuts or walnuts
1/4 c. all purpose flour
1 1/2 tbsp. baking powder

FROSTING:

1 pt. heavy cream
1/2 c. + 2 tbsp. sugar
1/4 c. + 1 tbsp. chocolate flavor drink mix
2 1/2 tsp. vanilla
1 tsp. instant coffee

1. Grease and flour 2 (9") round cake pans; line with wax paper. Combine eggs and sugar in blender; blend until light and fluffy. Add nuts; blend until finely chopped. Add flour and baking powder. Blend until just mixed. Pour into prepared pans. Bake 20 to 25 minutes at 350 degrees until wooden pick inserted in center comes out clean, let stand in oven to complete cooking. Cool.

FROSTING: Combine ingredients in medium bowl. Must be refrigerated.
