WHITE BREAD 
2 1/2 c. warm (not hot) water
4-5 c. flour
2 tbsp. yeast
2 tbsp. sugar; optional

Add 2 cups flour and mix until blended. Add between 4-5 cups flour, or until a consistency is made that can be easily worked with without sticking to your hands. (If you add too much flour, you may add a little warm water.)

Knead this by hand and/or mixer until smooth. Place mixture in a greased bowl and let rise until doubled (1 hour). Pour out onto slightly floured surface and cut mixture in half. Knead each section and shape into desired shape for pan. (If making French bread, brush with oil and cornmeal). Let rise for 1 hour. Bake at 350 degrees for 20 minutes or until it sounds hollow when tapped and light brown on top.
